Also ich habe ja kulinarisch schon einiges erlebt… aber das hier … das landet definitiv in den Top 5 meiner Lieblingsdesserts. Tatsächlich spukt mir sogar gerade der Gedanke im Kopf herum, ob ich jemals wieder einen richtigen Cheesecake backen werde, wenn es auch ganz ohne Ofen und mindestens genauso lecker geht. Während ich hier so tippe vertilge ich übrigens gerade eine riesige Portion und komme aus den “Mmmmmhhhh…”s gar nicht mehr heraus.
On my culinary adventures I have come across some quite delicious dishes … but this one just takes everything to a whole new level. Definitely, one of my Top 5 Desserts! In fact, it is so delicious that I am contemplating right now whether I will ever bake an ordinary cheesecake again, because this one is just soooo good without any baking :) Btw, while tipping this post right now I am indulging in the last glass of this… and let me just say that I cannot keep the “mmmmmhhhh’s” to myself any longer.
Imagine how unbelievably good this would be for a little picknick?! I am just absolutely in love.
Recipe for my English speaking friends!
Feel free to adjust sweetness & creaminess to your personal preference. This is not a recipe where you need to follow the exact measurements.
1-2 tbsp sugar
300g cream cheese (or mascarpone)
100ml cream (30% whipping cream)
1 package vanilla sugar (or vanilla extract, but then add a little more sugar)
1-2 tbsp of powdered sugar
10 digestive biscuits
10 tbsp melted butter
Take about half of the blueberries and put them in a pot along with the sugar. Bring to a boil and feel free to squish some of the blueberries. Simmer for about 1 minute. Set aside.
For the no-bake cheesecake you simply take 300g of cream cheese and mix it with 100ml of cream, vanilla sugar and sweeten it to your liking with powdered sugar.
Put digestive biscuits in a ziplock bag. The following could be considered great anger management / therapy ;) Crush biscuits into crumbs. Put in a bowl and mix with melted butter.
Now onto the layering: take a mason jar and alternate crumbs, cheesecake cream, blueberry sauce and fresh blueberries. Et voilà… enjoy!
